Ready? Go!
Ingredients for 15–20 cookies
  • 250 grams of white spelt flour
  • 110 grams of raw cane sugar
  • ½ packet of yeast
  • 90 ml of sunflower oil
  • Black Garlic from Voghiera
  • Chopped hazelnuts
  • 1 egg and 1 egg yolk
  • 1/2 Bourbon vanilla bean

PROCEDURE

Let’s start with the cookies. Place the sifted flour together with the baking powder on a work surface, forming a well.

Pour the brown sugar, sunflower seed oil, Bourbon vanilla seeds, Voghiera Black Garlic pieces, and finally the chopped hazelnuts into the center. Work the dough until it reaches a soft and smooth consistency, then form it into a regular-shaped ball and let it rest in the refrigerator wrapped in plastic wrap for at least 30 minutes.

When ready to prepare, roll out the dough on a floured cutting board, then cut it with cookie cutters in your preferred shape and arrange the cookies on a baking sheet lined with parchment paper.

Bake in a conventional oven preheated to 180°C for approximately 15 minutes or until golden on the surface and cooked through.

Allow to cool before serving.

Spelt is the oldest type of wheat cultivated by humans: it has been used as a food source since the Neolithic era, and was one of the main staples of the Roman legions during their campaigns of conquest.
