What is chronic inflammation?

Black garlic is characterised by a complex organoleptic profile: sweet and balsamic notes, hints of liquorice, plum, balsamic vinegar and a soft, caramelised texture. The fermentation process makes it much more digestible than fresh garlic, lacking the pungent smell and gentler on the stomach.
How black garlic fights inflammation
Black garlic contains powerful bioactive compounds, such as the S-allylcysteine (SAC) and the 2-linoleoylglycerolwhich reduce inflammation through various mechanisms:
- Reduction of NO and cytokines: SAC inhibits the activity of enzymes such as nitric oxide synthase (iNOS) and cyclooxygenase-2 (COX-2), blocking the production of inflammatory molecules [Ahmed & Wang, 2021]..
- Modulation of cellular pathways: Black garlic interferes with MAPK and NF-κB signalling pathways, reducing the activation of immune cells involved in inflammation [Kim et al., 2014]..
Scientific studies
In vitro experiments and animal models show that black garlic significantly reduces TNF-α and IL-6 levels, attenuating systemic inflammation and protecting against conditions such as sepsis and arthritis [Ahmed & Wang, 2021][Kim et al., 2014]..
