Discover how black garlic can help you protect your body in a healthy and natural way.

What is chronic inflammation?

Inflammation is a natural response of the body to injury or infection. However, when it becomes chronic, it turns into a persistent problem that damages tissues and contributes to the development of diseases. Molecules such as pro-inflammatory cytokines (TNF-α, IL-6) and nitric oxide (NO) play a key role in this process [Ahmed & Wang, 2021][Kim et al., 2014].

The properties of black garlic: taste and digestibility

Black garlic stands out for its complex organoleptic profile: sweet and balsamic notes, hints of licorice, plum, balsamic vinegar, and a soft, caramelized texture. The fermentation process makes it much more digestible than fresh garlic, free of the pungent odor and gentler on the stomach.

How black garlic counteracts inflammation

Black garlic contains powerful bioactive compounds, such as S-allylcysteine (SAC) and 2-linoleoylglycerol, which reduce inflammation through several mechanisms:

Reduction of NO and cytokines: SAC inhibits the activity of enzymes such as nitric oxide synthase (iNOS) and cyclooxygenase-2 (COX-2), blocking the production of inflammatory molecules [Ahmed & Wang, 2021].

Modulation of cellular pathways: Black garlic interferes with the MAPK and NF-κB signaling pathways, reducing the activation of immune cells involved in inflammation [Kim et al., 2014].

Scientific studies

In vitro experiments and animal models demonstrate that black garlic significantly reduces levels of TNF-α and IL-6, attenuating systemic inflammation and protecting against conditions such as sepsis and arthritis [Ahmed & Wang, 2021][Kim et al., 2014].

Thanks to its properties, black garlic establishes itself as a natural support against inflammatory diseases, improving quality of life without significant side effects.

✨ Want to discover more about the benefits of black garlic?
Read our articles on antioxidants and the immune system or visit our official shop to try it for yourself.

To learn more about the benefits of fermented black garlic, visit the Health section.

A heartfelt thank you to Dr. Valentina Vecchi for her contribution to black garlic research, to Prof. Monica Borgatti for her academic guidance, and to the University of Ferrara for their constant commitment to scientific research.

SOURCES

Colín-González, A.
